ALMOND WILD LIME COOKIES

Ingredients

300g Almonds

Zest 1 Lime

Almond Wild Lime Cookies

1 Egg White Lightly Beaten

1/2 Cup Caster Sugar

1/4 tsp Baking Powder

2 Tsp Honey

1/4 Cup Wild Desert lime Marmalade

Method

Preheat oven to 160 degrees C, and line 2 trays with baking powder.

Blend Almonds, Zest and Baking powder in food processor until finely ground.

Add remaining ingredients and blend until dough just forms a sticky ball. Roll teaspoons of dough into balls with moistened hands.

Place on baking sheets and flatten slightly. Bake for about 20 minutes until light brown and cool on baking sheets
